About the Project

Τhe iFUNcultures project aims to exploit agro-industrial and food wastes as substrates for the cultivation of functional cultures, as well as to isolate prebiotic dietary fibers and/or proteins that will be used as immobilization supports of beneficial microorganisms.

The goal is to further assess the immobilized cultures as functional ingredients for the development of novel foods with potential health effects, targeting regulation of the intestinal microbiome in Type 1 Diabetes mellitus (T1D).
